UPDATE: A good excuse to wish you a happy holiday again... the kit prices bought from Midiphy don't include additional components you need to buy for about 50 to 100 euros (depending on where you buy them and whether you buy in bulk)
Before I start, the important stuff first - I just wanted to wish you a happy and safe holiday season! We're this close to a vaccine (yes, I'm getting one the first opportunity I have, even if it has a 5G chip in it) so hopefully just a bit more social distancing and we put this pandemic behind us without further damage.
Having said that, if you've got spare time while you're socially distant and are into DIY, LoopA from midiphy is one of the most interesting projects I've seen lately (170-270 euros for a kit depending on whether you get a case and which one).
It's a MIDI looper and sequencer, with a 6x6 Ableton Live style grid that's surprisingly powerful and easy to use for its size.
It's also available from builders, but at a substantially higher price point (500-600 euros)
