I think you are mis-characterising Hisoka a bit, especially when comparing him to Gon. Hisoka’s need is not to just to fight, but to kill. He will kill for amusement (in the Hunter exam, he killed those men surrounding him just for giggles - in the manga, he attacked them first). Also out of need - after letting Leorio and Kurapika go, he HAD to kill. But what he enjoys most is a good death match, and that’s ultimately what he wants from Gon (and Killua). In short, he is a psychopath.
