I usually have to remind myself that you cant take what she says at face value, I think of it like a defense mechanism or just elvish awkwardness as we've also seen Frieren being before heading out on her new journey of getting in touch with her emotions. Serie says the field of flowers spell is useless and impractical yet she's happily sitting in a room of well maintained flowers created with that spell. Says she's not taking on another human apprentice yet is excited and jumps at a somewhat (imo) half hearted attempt to recruit Fern. You say she hates humans but has great respect for their potential and understands/predicts they will overtake elves on the magical stage. She's not as cold and callous as she lets on, even when talking down about Flamme during the will scene the next scene is from her perspective and betrays her fondness for Flamme, reminiscing on her life and impact with Frieren the only other person who truly saw and knew Flamme like Serie does. She also shows her fondness for her apprentices in the lines "I choose my apprentices on a whim, their personalities and favorite spells carved in my mind, as pitiful as most proved to be I've never regretted taking them on." I think her word choice of pitiful is underlaid with a frustration that when she says shes disappointed in her students what she's really saddened and frustrated that they wont be around much longer in her life and reach the potential she knows they have simply due to their short life spans. Even apologizing to Sense after she see's she was wrong about the crop of new mages. On rewatches I think you might pick it out some more. Thanks for coming to my Serie is just a god tier tsundere ted talk :P
