In reading Davos’ chapters, it’s worth remembering that he is not a young man. His two eldest sons captain their own ships, and given their social standing, this is probably a position they needed to earn. I can’t imagine them being much younger than their mid twenties. Davos was lowborn, which means he likely wasn’t married off young for political reasons or to fulfill some prophecy, and combined with his sons’ probable ages, he’s probably at least in his mid 40s at the start of ACOK. Perhaps I’m reading too much into it (GRRM can’t math and all) but it is interesting to read Stannis’ and Davos’ interactions while remembering that Stannis is probably closer in age to Davos’ elder sons than he is to Davos himself.

While popular wisdom holds that the former bird was, in the hierarchy, acceptable for a yeoman to own and the gyrfalcon a bid of kings, my own experience has been that gyrfalcons will fly for anyone and are relatively easy to train. Goshawks are much harder to train, but tend to bond more intensely with their handlers. (I work weekends at a bird of prey centre) . Seems appropriate for these two.
