I think Logan wanted to use his relationship with Rory as a way to make himself feel grown up, whereas Rory knows she still has to grow up via the slow path. She's not done baking. Before she can settle down, she needs to go out into the world and compare it to Stars Hollow and to Yale. There are 9 years in between the airing of 7x22 and of A Year in the Life, so in a certain sense next episode still will be goodbye. And then hello again a lot later.

In one episode, the characters were studying, and used a mnemonic device to remember the abbreviation for gold (AU). "Ay you! Give me back my gold watch!" It's been more than 40 years, and I've never forgotten the abbreviation for gold. 🤣
