You seem to side with the parents in your reactions (based off Emily in Gilmore Girls and the Buckleys here) but I completely disagree that Buck should feel any sort of embarrassment about blowing up at his parents. It's already been stated that they were emotionally absent parents to the point where their own kid feels like they just liked each other more than they liked him. He's told them directly that he's gone his whole life feeling like he's a constant disappointment. Even the way they behave towards Maddie, with all the not so subtle digs at how they feel she's the one to be blamed for "choosing" Doug, how she's waited so long to get pregnant, etc. All these things affect a person's psyche. Just because they weren't physically abusive doesn't mean that they didn't have an obviously negative impact on their children's lives. And when confronted with it, they put the blame back on their kids, saying they didn't "make it easy for them". Even Maddie asked if they were supposed to, seeing as how they were just kids. It's the thing about Emily and the thing about the Buckleys - it's a LOT of subtle things. Body language, facial expressions, tone, etc. Sometimes it's also about putting yourselves in the characters' shoes. You've mentioned multiple times that if it's your kid in need of something, you'd be there no question. The Buckleys said here they couldn't go see Buck in hospital whenever he was sent there because they didn't like seeing their kids in hospital. Would that have stopped you from seeing your kid if they were admitted? It was too painful to think of them like that so you stayed away? And if it had been your parents who just didn't even come to visit you let alone stayed by your bedside while you're recuperating, would you not be hurt by it?

Just so you get why Buck freaked out a bit more, even though it may seem like their parents were being nice, most of the things they were saying to Maddie were incredibly backhanded. Like the "You picked a good one this time." comment is essentially putting the blame on her for "picking" Doug and not seeing he was a bad person sooner, rather than on him for being a piece of shit. Then the mom also says something like "We held out hope that you would come to your senses, and you finally did." which again puts the blame on Maddie for staying in the relationship and makes it seem like she was letting Doug hurt her, and it also ignores the fact that she didn't just leave like a normal relationship, she ran and had to hide. And as Buck pointed out, the parents didn't come to Maddie's wedding, and then they cut her off, were living within like 5 minutes of Maddie and Doug through most of their marriage and were oblivious to what was going on despite the fact that they never liked Doug, and now essentially put the blame on her and avoid talking about what really happened. I think after not seeing them for so long, everything just built up in Buck and he had to say something, plus he knows Maddie isn't very confrontational but could tell she was upset, and he wanted to stand up for her.
