Its possible Parish was missing at the end because Tracey had paralyzed him. And even when Kanima venom begins to wear off, the effects linger for a bit. It would be no help if he were just hobbling around Deaton's clinic. Getting in the way lol. And I assume him going hellhound would be similar to Scott trying to shift when venom is still in his system. Very near impossible.
