I really enjoyed keto when I was on it, felt really good. But it raised my apoB and LDL levels a lot, though I continued it intermitently. Not having major risk factors (hypertension, diabetes, smoking) will cause a slow buildup of plaque, but apoB is necessary for atherosclerosis. Most likely you will not be affected soon but if you plan to keep on living beyond 100 and looking for imortality it would be quite reckless to build plaque. At birth we had a low apoB ( in the 20s) and it increases with age. Many mammals, especially carnivourus mammals relay on apoA (HDL-c) for transporting and less on apoB, unlike us, and have way lower apoB levels and almost no levels of plaque. I think it's important for body composition and energy to find a good diet and not use diet for cholesterol levels, as there are many other things that will get a good apoB level. Let's not fall into the trap of a naturalistic fallacy, what our acestors did at a certain time may or may not be good for us, it may give us a good amout of energy but it may be not Optimised for longevity as this was not an evolutionary criterion, like wating to live beyond 100. Anyway, for me the literature is not convincing that red meat is causing cancer, but a high apoB that can be caused by high saturated fat intake is almost certain a cause of atherosclerosis.
