I can only say it seems to me it was intense and fun session for you. In terms of how meaningful character concepts can be in an actual "do or die" situation, Uberhealing Summoner, Candlekeeper and, to a bit lesser extent, Bearbarian (the DM is not obliged to dump hundreds of points of damage into you, he/she can attack other characters...), are, in my opinion, the most impactful builds I've made so far. Other characters are very powerful in their own way too, but those 3 would definitely be my top recommendations for someone wanting to make a real difference at a table.

My DM is awesome he is willing to be super flexible and really enhance the experience for players his only fault is sometimes it feels like no matter how well we perform he has something set in mind and it's going to happen regardless. We have more dragons to fight so I'm going to have more characters of yours to play as I'm leaning towards Bearberian to be a HP sponge I'm trying to make sure my DM never has a chance to get to do what he wants and total party kill us the adventure will most likely be between levels 11 + 13 is there anything you would pound the table on that I play instead in that level range?

Hey bud, just let you know I played the candle keeper class last night up until Level 11 which was the perfect level for it because it got access to the heal spell we fought an ancient black dragon and 3 Undead shamblers a much higher see our than our level we had one rare and three uncommons also because of our campaign there's a flying orb that drains all the magic from a magical item was per round from a randomly selected player my DM wanted to kill us to show us how Opie he made us in our main campaign and how we would fare against a real dragon without all of his a Homebrew items he thought he was going to wipe the floor with us with his dragon and his Undead shamblers but thanks to the wonderful candle keeper build not a single person died I managed to bring party members back from Death saving throws 4 * and legitimately healed someone from one HP tell Max HP at 95 in one turn lol needless to say are dungeon master kept saying at the end if not for my character we all would have been dead within four rounds instead we defeated the Beast

Also, Bladesingers are awesome general purpose spellcasters, because their Concentration saves are among the best in the game still.

Candlekeeper for support and damage mitigation, Bearbarian for soaking damage, Storm Priest or Healing Blaster Sorlock (you can take Half-drow instead of Aasimar for the Elven Accuracy feat + Darkness + Devil's Sight) for damage output.

Hey bud! In my long running campaign we are rolling one time only level 11 characters to fight a Ancient Black Dragon, do you have any optimizee build suggestions my friend?
