New England Vlog Series (1/2)

First of two Vlogs from our time in NE. While on tour though Portland Maine, our New England guide, DJ Lucas, took us to the Porthole, a local seafood restaurant. Should have the Boston edition of this vlog up later tonight, and a continuation of our cryptid series later this week.

For anyone ever wanting to eat mussels, from a Chef. If you don't enjoy the NE style of pure seafood flavor with just added fat i.e. butter (the recipe I will type (and can add others if requested)) will still have the element but other ingredients to help the average person to really enjoy them. Chorizo Mussels: - brown garlic in olive oil in a saute pan on med heat (med-low if electric) -once browned and fragrant add ground chorizo (store bought for breakfast tacos etc is okay, but best option is a cured/dried spanish chorizo that you finely chop or run through a food processor) - add sofrito (Spanish base of tomato, garlic, cilantro, onion, bell pepper, serrano/poblano, etc reduced of all liquid) Goya or other brand store bought is fine - sauté until fragrant, add mussels and toss around frequently -deglaze pan with a white wine that you yourself would drink. Post deglaze add a solid base on wine to reduce by 1/2-3/4 -cap pan with another similar size sauté pan until mussels open up and wine is sufficiently reduced -add 2 pats of butter (~1.5-2 tbsp in a restaurant, 2/3 tbsp at home *do the restaurant option if health is not an issue*) and swirl in a circle until incorporated and sauce is thick -pour in a bowl with chorizo, wine, sofrito, garlic, etc mixture over top the mussels - serve with fresh toasted bread and garnish with finely chopped parsley I almost guarantee you if done right, and if you will/can eat pork, these are the best mussels you will ever have. If in the US and possible near you, source PEI Mussels. They are flown into all places that carry them overnight post harvest. Also Salt the sauce with ~1 tsp salt post reduction (doing it before reduction can lead to it being salty if unsure)

I love the show and find they usually do a great job getting people from the area. I live outside Portland and can tell you nobody with a Mass plate is considered a local. Would be like having someone from LA be your guide in Vegas. Even within a state you should try to be local like someone from NYC would never be your guide to Buffalo…

Damn seeing the characters you guys find is always great but it's very different seeing them represent my region, felt myself cringing at more of this than I expected, particularly the mussel/oyster/clam bit. Not sure if that says more about him or me, but if you call yourself a New Englander and don't know that distinction then don't come to Boston because it's on sight. The way they let those oysters just sit there too... have some fucking shame.

I love your work, but the last seven minutes of this had the same non-copyrighted iMovie song on repeat and it was so annoying… I feel like you guys do really amazing work and I’m happy to keep supporting you, but this just seemed a little bit lazy… The cutting were good and I really did enjoy this video but that song was so annoying at the end… It was like elevator music 😅
