Yes, the main difference with Patreon is that you pay only once on Itch and then get all the updates without paying, the same model as on Steam. Another difference there is that you don't get news updates, polls and other benefits. In short - you get the special version with all the released and future eps. :) As for the Steam keys - I will be sending them when the game is released on Steam. Itch has pretty convenient interface to send the keys. And the Steamdeck - since it's on Linux, I don't think there'll be any troubles with running the game there, but I will be testing it anyway because it's among the planned platforms.
